Gongura is the Telugu name for the Roselle plant (Hibiscus sabdariffa), also called Sorrel or Kenaf. It grows naturally in Telangana's black cotton soil and semi-arid climate — conditions that give the leaf its distinctive sharp, sour flavour.

The leaf is high in iron, Vitamin C, and folic acid, and has been part of Telangana cooking for centuries. It is used fresh in chutneys, cooked in curries, and preserved as pickle. Of all its uses, Gongura Pickle — the oil-preserved, spiced version — is the most beloved and the most widely eaten form.

4. How Is Gongura Pickle Made? (Traditional Telangana Method)

Ingredients (serves a 500g jar)

  • Fresh Gongura leaves — 500g
  • Guntur dry red chillies — 8 to 10
  • Mustard seeds — 2 tsp
  • Garlic cloves — 6 to 8
  • Cold-pressed sesame oil — 4 tbsp
  • Salt — to taste
  • Fenugreek seeds — ½ tsp
  • Asafoetida (hing) — a pinch

Method

Step 1 — Wash and sun-dry the Gongura leaves for 4 to 6 hours to remove excess moisture. This is essential for shelf life.

Step 2 — Dry roast the red chillies, mustard seeds, and fenugreek seeds in a pan until aromatic. Let them cool completely.

Step 3 — Grind the roasted spices coarsely. Do not over-grind — the texture should remain slightly rough.

Step 4 — Cook the Gongura leaves in a pan with a little oil until they wilt and release moisture completely. Cool.

Step 5 — Blend the cooked Gongura with the ground spices and garlic into a coarse paste.

Step 6 — Temper — heat sesame oil until it shimmers, add a pinch of asafoetida and mustard seeds. Pour directly over the Gongura paste.

Step 7 — Mix well, add salt, and pack into a clean, dry glass jar. Allow to rest for at least 24–48 hours before eating. Flavour deepens over 3 to 5 days.
